Cornbread-Topped BBQ Chicken

The picture doesn't do it justice. AT ALL. This recipe was SOOOOOO delicious. Without me even asking, Ryken said "good". Since he's just learning to talk, that means a lot to this Mama. Mild spiciness mixes with sweet BBQ in this faux-BQ casserole. The recipe calls for cooked shredded chicken, which I made by putting a few frozen chicken breasts in the crock pot on high for 5 hours along with water and some salsa and chicken broth I had in the fridge.
