One of the best and easiest enchilada recipes I have come across (though to be fair I haven't come across that many). But it is really really good. Found in the Summer 2005 issue of Cooking for 2, or here. We had some leftover smoked BBQ pulled pork, which I added in and it ended up making it deliciously Tex-Mex.
